September - October
In september, the full ripeness of the grapes results in a perfect balance between sugar content and acidity. The vintage is in full swing.
We start with the white wine grapes: Sauvignon, Chardonnay and Viognier, followed by the red: Syrah, Cabernet-Sauvignon and finally Mourvedre. The new wine is fermenting in the vats and the long period of winemaking starts with the constant monitoring of temperatures and densities.

November
The first decanting of new wines takes place.
The vines are fertilised and prepared for pruning.


The winemaker resumes his labour of love for the year to come. Caring for a vineyard is a permanent battle against the elements: the air, sun, wind, water and cold, against matter such as rocks and soil, and against biology, the vines and the final product, wine.
