At setting, each fertilised inflorescence becomes a grape, thus forming a bunch. It is at this stage that the future vintage can first be evaluated. As they grow, the grapes remain green for a period which varies depending on the type;

August
In August, they start to change colour and ripen, and gradually acquire their final, mature colour. We are now 40 days away from the vintage. In the winery, the final preparations are made: the tanks, presses and vats are cleaned. The vintage can start.

As soon as the fruit is judged to be at the ultimate point of ripeness, harvesting begins.
The most crucial decision to be made when creating a fine wine is judging the exact point at which the grape’s flavour have reached the peak of their development.

Full ripeness is essential for making a rich flavourful wine. The winemaker spends more and more time in vineyard, tasting the grapes and measuring the sweetness of the crop of each variety before choosing the ideal time for harvesting each vineyard block.
