VinificationA long maceration (20 days) in an automatic "pigeage" vat . The "pigeage" is the process by which the marc is immersed in the juice.
Tasting noteIntense purple colour. Spicy nose of red berries. Fleshy, fruity wine. Nice futur.
Food matchesSkewer of pig with prunes, lamb, farm cheeses. Temperature : 16°-18°C.
