Sauvignon
LocalityThe Domaine de Gourgazaud is situated in the village of La Livinière, set in the foothillsof the Montagne Noire. The village acquires its name from “Cella Vinaria” (wine cellar), confirming the existence of ancient Roman vines of the region.
Geography of vineyardThe soil is composed of limestone from the "Miocène Era" , mixed with alluvium.

VinificationAfter “de-stemming” we follow with pelliculaire maceration with a light pressing in a lined stainless steel tank for 4 – 6 hours. Fermentation for 20 days at a controlled temperature.
Tasting notePale yellow colour with light green hints. Sharp nose of exotic fruits and pineapples. Full, fleshy, with a nice finish. Well balanced acidity and roundness.
Food matchesAperitif wine, tapas. Prawns and seafood. Serving temperature : 8° - 10°C.
