La Vigne de ma Mère

Locality
The Domaine de Gourgazaud is situated in the village of La Livinière, set in the foothillsof the Montagne Noire. The village acquires its name from “Cella Vinaria” (wine cellar), confirming the existence of ancient Roman vines of the region.

Geography of vineyard
The soil is composed of limestone from the "Miocène Era" , mixed with alluvium.

Vinification
The grapes are harvested by hand. After “de-stemming” we follow with light pressing to extract only the best juice. Slow fermentation in oak barrels in order to respect the exceptional character of the grapes from the black shale .

Tasting note
Beautiful golden yellow colour. Intense nose of iris. The palate is full, balanced, powerfull, polished and mint.

Food matches
Aperitif wine. Foie gras, asparaguses and oysters. Cheese platters. Temperature : 6° - 8°C.
