Viognier
LocalityThe Domaine de Gourgazaud is situated in the village of La Livinière, set in the foothillsof the Montagne Noire. The village acquires its name from “Cella Vinaria” (wine cellar), confirming the existence of ancient Roman vines of the region.
Geography of vineyardThe soil is composed of limestone from the "Miocène Era" , mixed with alluvium.

VinificationAfter “de-stemming” we follow with pelliculaire maceration with a light pressing in a lined stainless steel tank for 4 - 6 hours. Fermentation for 20 days at a controlled temperature.
Tasting noteBeautiful pale green colour. Typical nose of apricots and peaches. Ample, long and lively.
Food matchesSushis, foie gras, asparagues, plate of cheese. Serving temperature : 6° - 8°C.
